Truite au Vin Jaune

Serves 4 people

  • 4 trout
  • 1 glass of Vin Jaune
  • Walnut oil
  • Curry powder
  • Balsamic vinegar
  • Olive oil
  • Salt and pepper
     
  1. Season the trout with salt, pepper and the curry powder then place them in a circle in a roasting tin, back uppermost.
     
  2. Drizzle some olive oil over them and roast for about 10 minutes in the oven at 170°C.
     
  3. On removing them from the oven, sprinkle with Vin Jaune. Serve with either seasonal vegetables or mushrooms, adding some of the cooking juices and a little walnut oil.
     
  4. Dust the plates with curry powder and add some drops of balsamic vinegar. Serve immediately.
